One beloved staple is Gallo Pinto, a hearty combination of rice and beans that embodies the soul of Costa Rican cuisine. Whether served at breakfast or enjoyed later in the day, this dish brings the warmth and vibrancy of Nicoya right to your table.

Here’s how to make this classic dish at home:
Gallo Pinto Recipe
Ingredients:
1 cup of cooked black beans (drained, with liquid reserved)
2 cups of cooked white rice
1 small onion, finely chopped
1 small red bell pepper, finely chopped
2 cloves of garlic, minced
2 tbsp of vegetable oil
2 tbsp of Salsa Lizano (or Worcestershire sauce as a substitute)
Fresh cilantro, chopped (for garnish)
Salt and pepper to taste
Instructions:
Heat the vegetable oil in a large skillet over medium heat.
Sauté the onion, red bell pepper, and garlic until softened and fragrant, about 3-4 minutes.
Add the cooked black beans along with a few tablespoons of the reserved bean liquid to the skillet. Stir and cook for 2-3 minutes.
Stir in the cooked rice, mixing everything thoroughly. Add more bean liquid if needed to keep the mixture moist.
Season with Salsa Lizano, salt, and pepper to taste. Cook for an additional 5 minutes, stirring occasionally, until the rice and beans are well combined and heated through.
Garnish with fresh cilantro before serving.
